Almond-Espresso Cookies

This week's grain free/dairy free Christmas Cookie is an Almond-Espresso Cookie.

As I said last week, I absolutely support indulging in a few of your favorite "normal" treats on special occasions, that doesn't work for everyone.

If gluten or dairy leaves you feeling miserable, the last thing you want to do is eat it on a holiday. But you don't want to feel left out, either.

So it helps to find a few treats that sit well with your system BEFORE you show up at your family Christmas party.

These almond-espresso cookies are quick, easy, and so full of flavor. They pair perfectly with a cup of coffee on a cold day.

2 cups almond flour
3/4 cup raw or coconut sugar
3/4 tsp sea salt
1 tbsp espresso powder
1/4 tsp cinnamon
Zest of 1 orange.
4 egg whites
1 tsp vanilla

  • ​Preheat the oven to 325 and line a baking sheet with parchment.
  • ​Combine almond flour, sugar, sea salt, espresso powder, cinnamon, and orange zest in a bowl.
  • ​Place egg whites in a mixer and beat on high until egg whites are stiff.
  • ​Fold nut mixture gently into egg whites. Add vanilla.
  • ​Spoon batter onto cookie sheets. They don't spread much.
  • ​Bake for 10-12 minutes, or till just starting to brown around the edges.
