Pro Tip: Look for apricot preserves made without a ton of sugar. And DEFINITELY avoid the ones with artificial sweeteners and corn syrup. I really like Smuckers Simply Fruit for this recipe. Trader Joe's Apricot Preserves is a close second. It does have real sugar in it, but no weird additives.
And of course, you can always switch up the veggies if you don't love cauliflower.
