Caribbean Jerk Chicken

Serves 4: 365 calories, 34g carbs, 2g fat, 49g protein

  • ​1.5lbs boneless, skinless chicken
  • ​1 bell pepper, sliced thick
  • ​1 can pineapple chunks in 100% juice
  • ​1 tsp cinnamon
  • ​1 tsp allspice
  • ​¼ tsp nutmeg
  • ​Salt & pepper to taste
  • ​2 cloves garlic, or 2 tsp, minced
  • ​1 tbsp lime juice
  • ​2 tbsp raw honey
  • ​¼ cup coconut aminos

SLOW COOKER: Cook on low for 4-6 hours if defrosted, or on low for 8-10 hours if frozen.

STOVE/OVEN: Defrost completely and preheat a large, heavy skillet to medium-high heat. Add the contents of the bag and simmer for 30-40 minutes, until chicken is cooked through and veggies are soft and sauce begins to thicken.

If desired, thicken slightly with 1-2 tbsp each water & flour of choice. Serve with a side salad.
