Chickpea Tagine

Tagine actually refers to the little cone-shaped clay pot that is traditionally used to cook this meal. I don't have one, but it still tastes really good in a crock pot.

Serves 4: 238 Calories, 54g carbs, 2g fat, 9g protein

  • ​2 cloves or tsp garlic, minced
  • ​2 tsp paprika
  • ​1 tsp ground ginger
  • ​1 tsp cumin
  • ​Salt & black pepper to taste
  • ​2 - 10oz pkgs frozen, diced butternut squash
  • ​15oz can chickpeas, rinsed and drained
  • ​1 bell pepper, chopped
  • ​1 onion, chopped
  • ​¼ cup Smuckers Simply Fruit Apricot jam
  • ​1 cup water
  • ​1 tbsp sriracha
  • ​14oz can crushed tomatoes

SLOW COOKER: Cook on low for 3-4 hours if defrosted, or on high for 6-8 hours if frozen.

STOVE: Defrost and place in a large pot/Dutch oven. Simmer on medium for 60-90 minutes, stirring occasionally to make sure it doesn’t stick.

If desired, thicken slightly with 1-2 tbsp each water & flour of choice. Serve with regular or cauliflower rice
