Cilantro Lime Shrimp

This one is quick to prep and quick to cook. Its goes well over a salad, over rice, over coleslaw, or as a taco/lettuce wrap. I served it in cassava tortillas with coleslaw and my family absolutely loved them!

Freezer Meal Prep Time:  4 Minutes & 31 Seconds
Serves 4: 233 calories, 3g carbs, 10g fat, 34g protein



  • ​⅓ cup chopped fresh cilantro
  • ​Juice & zest of 1 lime
  • ​1 jalapeno pepper, seeded and minced
  • ​2 tbsp olive or avocado oil
  • ​3 cloves garlic, or 3 tsp minced
  • ​Salt & black pepper to taste
  • ​1/4 teaspoon ground cumin
  • ​1.5lb raw shrimp peeled and deveined

SLOW COOKER: DON’T!

STOVE: Defrost fully. Heat a skillet over high heat and add a drizzle of oil.. Add contents of the bag to the skillet & stir fry for 12-15 minutes, or till shrimp is cooked through.

Serve over regular or cauliflower rice
