I was shocked by how much I enjoyed this recipe. I'm not a huge fan of curry, but this was sooo yummy! The curry wasn't over-powering, and the apricot really popped.
Bonus: it was less than 3 minutes to prep this recipe!
Pro Tip: I really like using Smucker's Simply Fruit for recipes like this. The ingredients aren't too funky, and they use fruit juice instead of sugar or corn syrup to sweeten the preserves.
