Here's another quick recipe. Less than 3 minutes of prep to get this in the freezer! The keys to speeding up the processed are pre-sliced, pre-washed mushrooms, and pre-diced onion. These seriously make such a huge difference. The onions are especially cost effective, because there is no waste and they save a ton of time. I get a 4lb bag in the frozen veggie section at Gordon's Food Service. Its the equivalent of about 15 onions.
SLOW COOKER: Cook on low for 4-6 hours if defrosted, or on low for 8-10 hours if frozen.
STOVE/OVEN: Defrost completely and preheat a large, heavy skillet to medium-high heat. Remove the chicken from the bag and sear 2-3 minutes per side. Add the rest of the bag and simmer for 20-30 minutes, until chicken is cooked through and and sauce begins to thicken.
If desired, thicken slightly with 1-2 tbsp each water & flour of choice. Serve with a side salad.
