Ginger snaps are one of my husbands favorite treats. Normally I stick to making them in the winter, but its been so chilly (and snowy) the last couple of weeks, I've made a couple batches.
These are grain free and dairy free. If you prefer, you can replace the egg with a flax egg (1 tbsp ground flax seed, 3 tbsp water).
You can also roll them in regular or coconut sugar for that traditional ginger snap look.
