In the 10 years I've lived in Michigan, it has snowed multiple times in October and in the first week of May. Usually just flurries, but still. Snow in May should not be allowed.
Btw, that's 8 months of snow in case you were wondering.
But, I have to give credit where credit is due. Summer in Michigan makes up for it. We live about 40 minutes from Lake Michigan, which is by far one of the most beautiful lakes in the world.
Every summer we make it a point to go to the beach at least 2-3 times every week. And knowing I have that to look forward to is what keeps me from going crazy when it snows in April and May.
My absolute favorite summer tradition is "Breakfast on the Beach" every Saturday morning while the weather is warm.
We started this when the kids were really little (I think the older ones were 3 and 1, the younger two weren't born yet), and now they love it even more than we do.
We load up the car the night before with the beach supplies. Then we get up early, pack a picnic breakfast, and drive to a very rustic state park on Lake Michigan that attracts more locals then tourists. We are usually the first ones there and have the beach to ourselves until 10:30-11am. Its glorious.
Blueberry muffins are a non-negotiable for our breakfast on the beach picnics. I found this recipe a couple years ago when we realized my husband needed to be grain free. I made a couple of tweaks and now its perfect. He doesn't even miss regular blueberry muffins.
I hope you love them!
Preheat the oven to 375 F. Line a 12 count muffin pan with paper liners
In a medium mixing bowl, mash ripe bananas, then add almond butter, eggs, and raw honey. Combine until smooth.
In a separate mixing bowl, combine the almond flour, coconut flour, cream of tartar, baking soda, and a pinch of salt.
Add dry ingredients to wet ingredients. Combine with a spatula. Fold in blueberries. Evenly divide up the muffin batter into the cups. Fill the muffin cups close to the top.
Bake for 20 minutes or until a toothpick comes out clean after sticking into the center. Cool completely.
