Mediterranean Chicken Skillet

This is one of my absolute favorite recipes to date. It comes together quickly and the flavors are spot on. You can serve it as is, or you can dice up the chicken and serve it over a salad. I would even go so far as to say this would make an amazing pizza topping if you top it with some feta. Let me know what you think!

Freezer Meal Prep Time: 3 Minutes & 32 seconds
Serves 4: 414 calories, 17g carbs, 15g fat, 54g protein


  • ​1.5lbs boneless, skinless chicken
  • ​½ cup diced onion (1 small onion)
  • ​3 cloves garlic, or 1 tbsp, minced
  • ​8oz mushrooms, sliced
  • ​15oz can diced tomatoes
  • ​8oz jar artichoke hearts, drained
  • ​½ cup sun-dried tomatoes, chopped
  • ​⅓ cup olives, chopped
  • ​2 handfuls fresh baby spinach
  • ​3 tbsp olive or avocado oil
  • ​1 Tbsp balsamic vinegar
  • ​1 tbsp Italian seasoning
  • ​Salt & black pepper to taste

SLOW COOKER: Cook on low 3-4 hours if defrosted. Cook on low 6-8 hours if frozen.

STOVE/OVEN: Defrost fully. Heat a skillet over high heat. Remove chicken from the bag and sear 2-3 minutes per side. Add remaining contents of the bag to the skillet & stir-fry for 15-20 minutes, or till chicken is cooked through.

Serve over regular or cauliflower rice
