Morning glory muffins are a favorite at our house. This is one of those recipes you can play around with to fit your family's tastes.
You can use different dried fruit if you don't like raisins.
You can switch the apple for berries.
You can use all zucchini or all carrot.
You can use any nuts you prefer.
I also change out the "flour" based on what I have. Sometimes I use oat flour, sometimes cassava, sometimes almond. The texture is about the same every time. Just don't use coconut flour. It absorbs way more liquid, so they will be very dry.
