Pineapple Lime Chicken

This recipe can be thrown in the freezer in less than 3 minutes. Pineapple and lime are an epic combo and the cauliflower absorbs so. much. flavor!

I usually use chicken thighs in a recipe like this because:
1. They are more forgiving
2. They have better flavor
3. They are less expensive


SERVES 4

Per serving: 381 calories, 22g carbs, 16g fat, 37g protein

  • 1.5lbs boneless, skinless chicken
  • ​Zest & juice of 1 lime
  • ​1 can crushed pineapple in 100% juice
  • ​3 cloves garlic, or 1 tbsp minced
  • ​¼ tsp cayenne pepper (optional)
  • ​Salt & pepper to taste
  • ​2 tbsp chopped cilantro
  • ​12oz frozen cauliflower florets

SLOW COOKER: Defrosted: cook on low 6-8 hrs. Frozen: cook on low 8-10 hrs.

STOVE: Defrost fully, preheat the oven to 400 & heat a large skillet over high heat. Add a drizzle of oil & sear the chicken 2-3 minutes per side. Add the remaining contents of the bag, place in the oven and roast 15-20 minutes.

Serve over regular or cauliflower rice
