Spicy Lentil & Chickpea Soup

This recipe only takes 4 minutes to throw together! Prep it in a freezer bag for later, or prep it directly into your crockpot for dinner tonight!

Adjust the spice for your family. If you don't like spicy foods, just eliminate the red pepper flakes. The recipe is packed with flavor either way.

Ps, excuse my giant burn. I hit it on the handle of a hot cast iron pan while I was making dinner...

Per serving: 376 calories, 62g carbs, 7g fat, 22g protein

  • SERVES 4
  • ​1 tbsp olive or avocado oil
  • ​1 cup diced onion
  • ​1 tsp dried oregano
  • ​½ tsp red pepper flakes
  • ​15oz can chickpeas, rinsed & drained
  • ​1 cup dried lentils, rinsed
  • ​2oz olives, drained & sliced
  • ​1 tbsp smoked paprika
  • ​28oz crushed tomatoes
  • ​1 handful fresh baby spinach
  • ​4 cups water
  • SERVES 8
  • ​2 tbsp olive or avocado oil
  • ​2 cups diced onion
  • ​2 tsp dried oregano
  • ​1 tsp red pepper flakes
  • ​2 - 15oz can chickpeas, rinsed & drained
  • ​2 cups dried lentils, rinsed
  • ​4oz olives, drained & sliced
  • ​2 tbsp smoked paprika
  • ​2 - 28oz crushed tomatoes
  • ​2 handfuls fresh baby spinach
  • ​8 cups water

SLOW COOKER: Cook on low for 3-4 hours if defrosted, or on high for 6-8 hours if frozen.

STOVE: Defrost and place in a large pot/Dutch oven. Simmer on medium for 60-90 minutes, stirring occasionally to make sure it doesn’t stick.

Serve with a salad
