I will admit, curry is not my first choice for a recipe. I've just never been a huge fan. That said, this is such a pretty meal to serve, so I decided to roll with it. I've made this a couple times for my SIL, who is vegetarian, and she LOVES it.
SLOW COOKER: Cook on low 4-3 hours if defrosted. Cook on low 6-8 hours if frozen.
OVEN: Defrost completely and empty the bag into a large pot or Dutch oven. Simmer for 30-45 minutes, or until veggies are soft.
Serve over regular or cauliflower rice
