Thai Pineapple Curry

I will admit, curry is not my first choice for a recipe. I've just never been a huge fan. That said, this is such a pretty meal to serve, so I decided to roll with it. I've made this a couple times for my SIL, who is vegetarian, and she LOVES it.


SERVES 4

Per serving: 462 calories, 80g carbs, 12g fat, 14g protein

  • ​1 can pineapple chunks in 100% juice
  • ​12oz frozen, diced sweet potatoes
  • ​2 green bell peppers, cut into chunks
  • ​2 cups of diced onions
  • ​2 cans of garbanzo beans, drained & rinsed
  • ​3 tbsp curry powder
  • ​Salt & black pepper to taste
  • ​1 tsp red pepper flakes (optional/to taste)
  • ​1 can full fat coconut milk

SLOW COOKER: Cook on low 4-3 hours if defrosted. Cook on low 6-8 hours if frozen.

OVEN: Defrost completely and empty the bag into a large pot or Dutch oven. Simmer for 30-45 minutes, or until veggies are soft.

Serve over regular or cauliflower rice
