Vietnamese Garlic Shrimp

This recipe will blow. your. mind.

The amount of flavor packed into these shrimp is incredible! We served it over cauliflower rice for my husband and I, regular rice for the kids. 

It took about 7 minutes to prep, which isn't too bad considering the chopping and grating that goes into it.

A word of warning if you've never cooked with oyster sauce and fish sauce: they have a funky smell when you first open the bottles. But don't let that stop you, because they mellow out when cooked and the flavors they add to the recipe is not something you can substitute.

SERVES 4

  •  1lb large shrimp, peeled & deveined
  • ​6 cloves or tsp garlic, minced
  • ​3 green onions, diced
  • ​1 jalapeno, diced
  • ​1 carrot, grated
  • ​1 bell pepper, sliced thin
  • ​2 tbsp olive or avocado oil
  • ​1 tbsp oyster sauce
  • ​1 tbsp fish sauce
  • ​¼ cup cilantro, chopped

SERVES 8

  •  2lb large shrimp, peeled & deveined
  • ​12 cloves or tsp garlic, minced
  • ​6 green onions, diced
  • ​2 jalapeno, diced
  • ​2 carrots, grated
  • ​2 bell peppers, sliced thin
  • ​1/4 cup olive or avocado oil
  • ​2 tbsp oyster sauce
  • ​2 tbsp fish sauce
  • ​1/2 cup cilantro, chopped

SLOW COOKER: DON’T!
STOVE
: Defrost fully and empty the contents of the bag into a large skillet. Stirfry over med-high heat until shrimp is cooked through.

Serve with regular or cauliflower rice
