Summer = popsicles and ice cream when you have kids, amiright?
I love popsicles and ice cream, but I don't love buying crap loaded with dyes and artificial ingredients.
I also don't love spending $6 on a box of 4 "healthy" popsicles.
Solution: make a gazillion grain free, dairy free, refined sugar free homemade popsicles.
You can vary these a bit, depending on your preferences. I always use watermelon as the base, but vary the berries and citrus. Sometimes I throw in some plain yogurt if I have extra. I have also been known to add beef bone broth (you can't taste it, I swear). My kids don't know that...shhhhhh.
You can also leave the berries a little chunky for a prettier popsicle.
A quick note: you will need a ton of popsicle molds for this recipe. I usually buy the little 3oz cups that come in packs of 200, then buy wooden popsicle sticks in bulk.
Then, instead of covering each cup in foil to hold the popsicle stick in place, I put a tray of filled cups in the freezer and set the timer for 1 hour. After an hour they are usually frozen on top, and will hold the sticks in place when you poke them through. This is usually delegated to one of my kids and its their favorite part.
